Meal Plan Monday - July 16, 2012

I'm loving this hot summer weather!  How 'bout you?  We've been having fun but haven't made use of our pool membership quite as much as usual since my daughter (my 10 year old) broke her arm! But now that she's out of the temporary splint and into a very cool tie-dye waterproof cast, we can again enjoy some swimming.  This week both my daughters will be going to Praise Dance Camp.  My 4 year old will be there in the mornings and my 10 year old in the afternoons.  Thankfully, the dance school is right up the road so the driving back and forth won't be too bad. Just have to make some fun plans for my son who most definitely did not want to go to dance camp. 

Well anyway, here's our allergy-friendly meal plan for this week.  As always, everything listed is free of gluten, dairy and eggs.

MONDAY - Grilled Chicken Drumsticks and Oven Fries

TUESDAY - Gluten and Dairy-Free Chicken Scampi  (I was going to make Shrimp Scampi, but decided while grocery shopping that the shrimp was pricey and I already had some chicken breasts in the freezer so I'll opt for the more economical option this week.)

WEDNESDAY - Oven Baked Chicken Cacciatore  (My son has a vision therapy appointment at 5:30 so I'll make this dish ahead of time and set the oven timer so dinner will be ready when we get home.)

THURSDAY - Tacos!  

FRIDAY (my birthday!) - Grilled Steak and Sweet Potato French Fries (I've tried making sweet potato fries from scratch but I can never get them to turn out right.  (Anyone know the secret?)   As an alternative to homemade, we enjoy Alexia brand since they are gluten-free and yummy.)

SATURDAY - Pasta Salad

SUNDAY - Hamburgers

  2. The oven baked chicken cacciatori sounds delicious. I may have to snag that recipe sometime soon for my house to see how the kiddos like it!
