Anyone who deals with food allergies has, at one time or other, had to face the problem of what to eat while traveling. This coming weekend, our family will be traveling to visit my husband's family. Its an easy trip because we'll only be in the car for 3 hours and we will be staying with my in-laws. But that doesn't mean we don't have to plan ahead for mealtime. Because my mother-in-law isn't able to do much cooking, I will be bringing along all our meals. I have a few dinners stashed away in the freezer, so I'll make it easy on myself and take one of those along. We'll also have to think about breakfast, lunch and snacks. And of course there's the graduation party we'll be attending, so a cupcake or cookies will be called for as well. So with that preface, here's our menu plan for this week. Monday: Spaghetti and Meatballs
Tuesday: Hamburgers (We didn't have these last week since we ate dinner at a friends house instead - delicious chuck roast, mashed potatoes and veggies!)
Wednesday: Sausage with Sauted Peppers, Onions and Mushrooms Over Rice
Thursday: Oven-baked Chicken Drumsticks and Oven-Fried Potatoes and Peas
Friday: Asian Peanut Butter Pork Tenderloin in the Crockpot (This is a family favorite that I discovered in a fabulous book Make It Fast, Cook It Slow by Stephanie O'Dea. The recipe is similar to another recipe by the same author for Peanut Butter Chicken which you can find on her blog Crockpot365..
Saturday: Tacos (This dinner will be at a graduation party for my newphew. We lucked out! I called ahead and found that my sister-in-law is planning to serve tacos, which my daughter will be able to eat! I'll just bring along some dairy-free cheese shreds for her to use in place of dairy cheese, I'll make some cookies to take along, and we'll be all set!)
Sunday: Skillet Pie (I have this made already and stored in the freezer, making it easy to bring on our trip and re-heat at my in-laws house.)
Ooh that peanut butter pork and chicken sounds good! It stinks that we have the peanut allergy in our household! :(
