From the beginning of my married life, I have written a weekly meal plan. Its the only way I can function during the week. If I haven't planned out the week's dinners ahead of time, then I find myself standing in front of the fridge at a total loss as to what to make when dinnertime rolls around. But its also a weakness - I no longer possess the ability to conjure up a dinner without a plan. That's partly because I write my weekly grocery list based on my meal plan. So if I didn't plan to make it, I won't have the ingredients on hand. And having three homeschooling children at home makes "running out to grab a few things" at the grocery store a bit impractical.
So here goes my first blogging attempt at sharing my meal plan. I hope to do this on a regular, if not weekly, basis. And just in case you need more ideas than just mine, check out this fabulous site where you can see tons of meal plans and recipes each week. Head over to Im an Organizing Junkie' s Meal Plan Monday.
Monday: Baked Chicken with Roast Potatoes and Gravy
Tuesday: Sauted Garlic Shrimp with Oven Fries and Corn (I'll be using Earth Balance dairy-free butter to saute the shrimp)
Wednesday: Gina Chicken over Rice
Thursday: Fried Potatoes with Ham and Corn
Friday: Pizza {Gluten, Dairy and Egg-Free}
Saturday: Macaroni and Cheese (I'll write a post in the near future with this great allergy-friendly recipe using Daiya Vegan Shreds)
Sunday: Hamburgers (hopefully on the grill, but if not, the stove-top skillet will turn out some yummy burgers)
Time to change Sunday's meal to a roast chuck roast in the crock pot with onions, potatoes and some type of vegetable...with apple crisp for dessert. Oh, and a cup of coffee. Sunday dinner just isn't the same without that. Move your hamburgers to next Monday, and you're ahead already!
