Meal Plan Monday

This week is a little unusual.  We just returned late Sunday night from a weekend visit with family.  We had a good time as usual, but we always return a bit cranky and tired from late nights and busy days.  That being said, tonight's dinner will have to be an easy one.  Then we have family coming to visit us this weekend, so our dinner plans will be a bit different Friday and Saturday to accomodate that.  So here's our plan:

Monday:  Salad Dressing Chicken and Rice
Tuesday:  Baked Chicken, Mashed Potatoes and Gravy
Wednesday:  Chili in the Crockpot and cornbread based on, but slightly modified from this great recipe from The Gluten Free Goddess.
ThursdaySlow Cooker Cashew Chicken Teriyaki (This is a  new recipe I recently found and tried and really liked!  Because I really don't like snap peas, I used broccoli instead.  If you use broccoli, just be sure to add it very near serving time to prevent mushy veggie syndrome.)
FridayPizza (We have a very busy Friday - field trip to historic Philadelphia, swing by the train station to pick up my dad, attempt to get 2 girls to dance class close to on-time.  Pizza, already made and waiting in the freezer, sounds like a winner to me!)
Saturday:  We'll be going out for dinner to Pei Wei.  If you're not familiar with this place, you should check it out.  Its owned by the same people who run P.F. Chang and they have a small, but nice selection on their gluten-free menu.  Very kid friendly, too!
Sunday:  Leftover Chili and perhaps a fresh batch of cornbread

  1. Thanks for joining the menu swap again this week. Chili and crockpots seem to be a common theme on menus lately. The Cashew Chicken Teriyaki sounds like something my family would like, too.
