I love Thanksgiving food! And most of it is so accomodating for food allergies. Here's what we do in our home. Our turkey gets a nice rub-down with Earth Balance vegan buttery spread before it goes in the oven. The mashed potatoes get creamed together with, again, Earth Balance buttery spread, a touch of almond milk and of course, salt. Peas are our traditional veggie so they don't need any special treatment. As for stuffing, I made it from scratch last year and it turned out great. I followed the instructions found here, substituting the cheapest gluten-free bread I could find at the store (Ener-G Light Tapioca bread - available at glutenfree.com (see side bar for link)). So here's what we're eating for the rest of the week:
Monday - Sonora Enchiladas
Tuesday - Gina Chicken over Rice
Wednesday - leftovers from Monday
Thursday Thanksgiving - turkey, stuffing, mashed potatoes, gravy, peas, cranberry sauce and apple pie
Friday - leftovers from Thanksgiving (love it!)
Saturday - Spaghetti and Meatballs
Sunday - Turkey Gone-Gone (My daughter named this. - Its really just leftover mashed potatoes with pieces of turkey mixed in and gravy poured over it. She named it because it gets eaten up fast and its all gone.)

Your apple pie has me drooling this morning. LOL. I didn't have apples on my Thanksgiving menu, but maybe I'll make it over the weekend instead. Happy Thanksgiving to you and yours!
