I've got the urge to bake but haven't had time to devote to it (sigh). I know if I was energetic and creative (and patient), I could combine baking and homeschooling with the doubly-wonderful outcome of educated kids and tasty treats. Yet somehow that never works out as well as I envision. So I'll put baking on the back burner (ha, ha, ha) and hope for an open spot in the week for some fun experimental kitchen time. In the mean time, we'll stick with our weekly dinner plan. Here it is:
MONDAY - We'll be dining at a friend's house (yah!). Last I heard, my friend is planning on serving Curry Chicken with Apples on Rice. Sounds awesome!
TUESDAY - Chicken Italiano
WEDNESDAY - Chili in the Crockpot along with Cornbread (I use a slightly altered version of the Gluten Free Goddess's cornbread recipe)
THURSDAY - Cream of Potato Soup and Bread (I've almost refined this soup recipe enough to share it. Hopefully I'll get all the details worked out this week and be able to post it shortly.)
FRIDAY - Baked Potatoes topped with Planned-Over Chili (from Wednesday)
SATURDAY - Creamy Chicken Pie Last time I made this, my daughter said it was her new favorite dinner - and ate enough to prove her point! I plan to make two - one for dinner and one for the freezer.
SUNDAY - Salad Dressing Chicken and Rice

I agree with you - Curry Chicken with Apples sounds awesome. Even better that you don't have to cook it! Hope you find time for baking. I gave into the urge yesterday. Just dropped all the work I needed to do, and got out the ingredients for cookies. Funny thing is that it wasn't that satisfying. I guess I need to bake some more. :) Have a good week!
