Here's another refreshing hot-weather dish to cool you off, fill you up and make your taste buds smile. Broccoli salad always shows up at a picnic or cook-out and makes a great side dish alongside grilled chicken, hamburgers, or steak. I've learned that people vary greatly in what they call a good broccoli salad. Some like it creamy, some like it dry. This one is on the creamy side, just so ya know. As long as you use vegan mayo, this broccoli salad is free of eggs, dairy and gluten. To keep the whole think vegan, just leave out the bacon.
Broccoli Salad {gluten, dairy and egg-free}
3 fresh broccoli crowns (about 6 cups of cut florets)
3/4 of a smallish red onion, finely diced (about 1 cup)
1 cup raisins
1 pound bacon, cooked till crisp and torn into bits (omit for vegan version)
3/4 cup vegan mayo
2 TBSP vinegar
1/3 cup sugar
To make dressing, mix together mayo, vinegar and sugar. Set aside. In large serving bowl, toss together broccoli, onion, raisins, and back. Pour dressing over broccoli mixture and toss to coat. Chill for at least one hour. Serve cold.

Deletei will never leave out the bacon. when i was a veggie, the only meat i ever really still wanted to eat was bacon. so when i started eating meat again, you can imagine the first thing i went for was a handful of the stuff.. mmmm bacon. and while i'm not one for mayo in any fashion, i can see some yogurt going very well with this salad :)

ReplyDeleteFor anyone who loves that unequivocable bacon flavor, but doesn't eat bacon (to avoid the processing chemicals), substitute it with a few dashes of natural liquid smoke mixed in with the mayo. I use this substitute regularly in many dishes I make. No one misses the actual bacon pieces.
