Meal Plan Monday

Pin It We had a great Thanksgiving and great leftovers!  Just one more dinner to create from leftover turkey, then on to "regular" food again.  On Tuesday and Wednesday, we'll be hosting some out-of-town family.  Two of my hubby's brothers are coming up from Maryland to help us put new siding on the house.  And when men work, they work up an appetite.  To accomodate hungry men, I'll be in the kitchen a little extra whipping up snacks and maybe some chocolate chip cookies.

Monday:  Turkey Noodle Soup and gluten-free biscuits.  These biscuits are based on the peach cobbler recipe found at Gluten Free Goddess.  She suggested the cobbler dough might be the basis for a good biscuit but she wasn't quite happy with it yet.  I only made a few changes (maybe not even necessary changes) and am very happy with the results.

TuesdaySpaghetti and Meatballs (I'll be using Schar Gluten Free Pasta)

Wednesday:  Taco Soup and Cornbread

Thursday:  Hoping to have a babysitter so Hubby and I can go out Christmas shopping. We'll make it easy and have pizza

Friday:  Reaping the benefits of stocking my freezer, we'll be having a meal I call Harper Chicken Fried Rice ready to go from freezer to oven.  (Sorry I don't have this recipe posted yet.)

Saturday:  We'll be getting our Christmas tree on Saturday, so we'll grab some Asian food at PeiWei.   ('Cause I don't want to be cooking instead of decorating our tree.)

Sunday:  Salad Dressing Chicken and Rice

  1. Looks like a great plan to eat well and get the holiday chores done sanely. We usually stop at Pei Wei for the spicy chicken and the chicken salad rolls when we go into the big city for back to school and Christmas shopping. It's a real treat when it's not close by and we go a couple times a year.

  2. Sounds like a yummy week at your house. I'll be watching for your recipe for Chicken Fried Rice. I've been wanting to try Pei Wei for a while, but just haven't gotten around to it yet. You and Wendy have convinced me that I need to make it a priority!
