Meal Plan Monday - Jan 2, 2012

Pin It Happy New Year!  In an effort to streamline my weekly menu planning and grocery shopping for this new year, I've been spending some time rethinking all that.  I've found some great resources on Organized Home.  For some help and inspiration, check out some of her articles and printables related to menu planning.

This week's menu has a nice mix of old standbys, with a few new recipes to try.

MONDAY - Homemade Hamburger Helper (ground beef and gravy served over noodles)

TUESDAY - Gina Chicken over Rice

WEDNESDAY - Two of of our kids have basketball practice in the evening, so I'll be relying of the crockpot for dinner.  I'll be trying a new recipe from one of my favorite crock-pot cookbooks, Fix It and Forget It, for Beef Stroganoff.

THURSDAY - Tacos - Always a good allergy-friendly choice as toppings can be added individually.

FRIDAY - I'm looking forward to trying out this new recipe for gluten and dairy-free Tuna Noodle Casserole.  This calls for a specific mayo which probably has egg in it.  As an egg-free alternative, I recommend Vegenaise, a tasty dairy and egg free mayo alternative.

SATURDAY - Chicken Italiano

SUNDAY - Salad Dressing Chicken over Rice  (A wonderfully tasty and easy meal - Just bake your boneless, skinless chicken breasts for about 30 minutes at 350 in salad dressing such as Nature's Promise Italian or other gluten, dairy and egg-free dressing)
