Here's a fun dinner - Shrimp or Chicken Scampi. I found this one posted on Olive Garden's website. Surprisingly, they have quite a few of their recipes posted, but this is the only one I've tried (so far). Of course, I switched out the offending ingredients for allergy-friendly ones but the recipe remains basically the same. I've only made it with shrimp, but I'm thinking it would work wonderfully with chicken instead.
Shrimp (or chicken) Scampi
1 1/2 lbs medium fresh shrimp. shelled (or 2 cups cubed chicken breast, cooked)
2 TBSP oil
1 medium onion, diced
1/2 cup white wine (white cooking wine works fine)
3 cloves garlic, minced
1 TBSP dried parsley (or 3 TBSP fresh parsley)
4 oz dairy-free butter (such as Earth Balance or SmartBalance Light)
1 12 oz box gluten-free pasta (I use Schar's gluten-free Tagliatelle)
salt and pepper to taste
Prepare pasta according to package instructions. Meanwhile, heat oil in saute pan. Add diced onion and saute for 2 minutes. Add garlic and saute for 1 minute - do not brown. Add butter, wine, and parsley. Let cook, stirring frequently, until sauce is reduced by half. Add shrimp and cook until shrimp is fully cooked (I think it's usually about 5 minutes or so). If using cooked chicken instead of shimp, add chicken pieces and cook till heated through. Serve over pasta. Add a salad and you've got a restaurant quality meal in 30 minutes or less.
This is exactly what I was looking for! I have the shrimp and GF pasta already and needed the rest of the steps. :)
